Day 13: Monday, April 4th

Today, so far, we had lunch at the Au Bon Pain Cafe Bakery at UCI. I ordered the Chipotle Black Bean Burger with Avocado on ciabatta bread. It also had caramelized onions and tomatoes. 


I also got iced hazelnut coffee.

[April 8th Update]
We ended up going to David's house for dinner (they had planned it beforehand).

Jenna picked up some dip from Albertson's so we munched on that before dinner was ready. No picture :(

Brenda found this delicious recipe for mushroom "meatballs" - I loveeed it. Armando is not a big fan (or at all, actually) of mushrooms so I don't think he enjoyed them as much as I did. They also made spaghetti and mozzarella sticks. It cheese was too melted, but the mozzarella sticks were still delish.
Um, this may not be the prettiest picture, but yeahhh.

Day 12: Sunday, April 3rd

I took a blueberry bagel with cream cheese to work for breakfast. Dyanne gave me a croissant, but I forgot to save a picture of it since I took it on snapchat and sent it out to Armando and a couple other firends lol I had the croissant and bagel with the iced caramel macchiato coffee from Starbucks that I had leftover from yesterday.
After work I went to my parents' house. My mom made me a black beans, serrano chili pepper, and egg scramble with a slice of avocado and tortillas. It was perf.
Later, Armando and I went to the Block to return his shoes and we stopped at Johnny Rockets. I ordered onion rings, fries, and a chocolate milkshake.
At night we went to Sonic's and I got a four-piece order of mozzarella cheese sticks and a strawberry slushie.

I have realized that eating meatless is not that hard, but I have to focus more on homemade meals.

Day 11: Saturday, April 2nd

On Saturday we woke up late and had breakfast for lunch, late lunch at that. We ended up going to IHOP and may have gone a little overboard by ordering a lot so we were pretty full for the entire day.

We got an order of half mozzarella cheese sticks and half onion rings as an appetizer.
I ordered the strawberries and bananas french toast plate. Last time I had ordered this plate, they realllly packed on the strawberry drizzle so I remembered (or Armando reminded me) to ask them not to put so much. 
The french toast platter came with a side of eggs and hashbrowns. 
I substituted the sausage links/bacon for red skin potatoes. I noticed that with the potatoes and the hashbrowns, I was eating a lot of potatoes. I have to be more conscientious about the health aspects of the food I'm choosing.
While we were studying at UCI, Armando got me an iced caramel macchiato from Starbucks which I did not finish. After studying with Jenna for a while, we took her to Joe's Italian Ice to try a Joe Latti (Italian ice cream and soft-serve ice cream in a cup).

Day 10: Friday, April 1st

Since not too many days have passed, I remember this day too (since I'm typing this up on April 4th). 

We went to Albertson's to buy food to eat at David's place with Angela, Brenda, Jenna, hmmm I think that's it to have dinner together. 

As "appetizer" we bought a seven layer dip and chips at Albertson's - not pictured & hence the store-bought tag - and we all finished that quickly. 

Brenda made some green enchiladas for us with a sunny side up egg each. The enchiladas were stuffed and covered with mozzarella cheese and we each decided if we wanted to add queso fresco to them once they were ready to eat. 

David tried to make this turmeric rice, but I guess he said it didn't come out as well as it should have. They smashed up avocados, similar to guacamole, but JUST avocado.
They made a salad of cucumber (I think it was) and tomato to go with the rice.
My enchiladas don't look that great because I added wayyy too much sour cream.

For dessert, I had ice cream with chocolate syrup and cookies (I only ate half a cookie :/)
This is all we ate this day... lol "all"

Day 9: March 31st

Okay, so I remember this day very well.
I woke up super early - 4am-ish - too make huevo a la Mexicana (eggs with tomato, onion, and serrano chili peppers) and I added mozzarella cheese, but I made tooooo much - enough for each and every fucking meal of the day.   

I ate so much egg, it was borderline disgusting at the end of the day. 

Not pictured: I ate three tacos for breakfast. 

Lunch: 
Huevo a la Mexicana bagel sandwich. 

For "dinner" which was during my nearly two hour drive home was a torta de huevo a la Mexicana - not pictured. 
I even had enough for an english muffin sandwich, but I just couldn't.

So note to self: don't include the same egg dish for every meal of the day.

Day 8: March 30th

Copied message from a previous post: To be honest, I'm catching up on the blog [today is Monday April 4th] and I don't know if this is all I ate. I haven't kept the blog up to date because I've been somewhat busy, but mainly because of procrastination.



I do remember having a bagel earlier in the day - not pictured. 

This salad is like another one I made before. 
Greens, an apple, an apricot, strawberries, and mushrooms. 
Dressing: olive oil and lime juice. 
I also added some Tajin to the salad. 

I was hungry at night, but not for a real meal so I got a bagel and added cream cheese and strawberry jelly. Yum.

Day 7: March 29th

Breakfast: 
Plain Greek yogurt with strawberries, an apple, and an apricot. Note to self: add granola or some nuts. 

Lunch and "Dinner":
I went to school this day so I packed two stuffed tortas.
They both had beans, queso fresco, lettuce, tomato, and jalapeños.


I did have a coffee from the YRL cafè as well.
