Day 25: Saturday, April 16th

Hi! 

Sadly, I haven't been taking pictures of all the food I eat these past weeks, but on the most part I did! 

Breakfast: We went to IHOP and this is what I ate. 
 


Dinner: I got the veggie delight footlong at Subway with avocado. It was good, but I had asked the lady to put extra jalapeƱos and turns out, more is not always better.



Armando tried the veggie patty at Subway and gave me a piece to try. It's made up of soy and veggies. It was good!

Day 18: Saturday, April 9th

We went to IHOP again! I looove their french toast.

I get the strawberries and banana french toast option.


I substituted the sausage/bacon with red skinned potatoes, but it turns out to be too much potato because of the hash browns.


For dinner, we went to In-N-Out where we finally tried the grilled cheese sandwich. I also got animal style fries and a chocolate milkshake. To me, the grilled cheese "burger" is fine without the meat! :)

Day 17: Friday, April 8th

This day we went to school to study with Jenna and her brother. Armando and I stopped at his favorite restaurant, Veggie Grill.


I ordered the Grilled Quinoa + Veg Burger with avocado and Yukon Gold fries. I didn't dislike the burger, but there was something I didn't really enjoy as much. I think it was either the cheese or the pickled onions. :/ 


Since we were studying, I also got a caramel macchiato from Starbucks and later on in the evening, I got a chocolate marble bread slice from Starbucks.

Day 16: Thursday, April 7th

Okay, so I tried to copy my mom's beans, eggs, and serrano chili peppers scramble, but it was a total fail. Canned beans are not the ones to use. It was gross!


Armando and I went to Red Robin for the first time since we stopped eating meat.

We ordered mozzarella sticks and deep-fried zucchinis. Hehe peep his UCI sweater. :)

I got mac and cheese and garlic fries. To be honest, the mac and cheese was alright, but I could live without it. The garlic fries were sooooooo flippin' good!!

Day 15: Wednesday, April 6th

Hi! [Note: I'm posting this on April 16th so I'm not sure if this is all I ate :/]

I prepared strawberries with greek yogurt and some seeds for breakfast :)



We went to a welcome event and we got dinner :) I had a veggie sandwich, fruit, pasta, and salad. Oh and that cookie! (I'm labeling this "restaurants" because I'm sure they had it catered from one lol

Day 14: Tuesday, April 5th

Hi! I'm posting this on April 16th so I don't remember if this is all I ate :/

Lunch: Chipotle :) I got the sofritas option which is tofu.

Mmmm these muffins from Food-4-Less are the bomb.com! They're soooo good!

Day 19: Sunday, April 10th

One of the first times (if not the first) trying a food truck as a vegetarian.

Monday, April 4, 2016

Day 13: Monday, April 4th

Today, so far, we had lunch at the Au Bon Pain Cafe Bakery at UCI. I ordered the Chipotle Black Bean Burger with Avocado on ciabatta bread. It also had caramelized onions and tomatoes. 


I also got iced hazelnut coffee. 
The burger also had caramelized onions and tomatoes. 
[April 8th Update]
We ended up going to David's house for dinner (they had planned it beforehand).

Jenna picked up some dip from Albertson's so we munched on that before dinner was ready. No picture :(

Brenda found this delicious recipe for mushroom "meatballs" - I loveeed it. Armando is not a big fan (or at all, actually) of mushrooms so I don't think he enjoyed them as much as I did. They also made spaghetti and mozzarella sticks. It cheese was too melted, but the mozzarella sticks were still delish.
Um, this may not be the prettiest picture, but yeahhh.

Day 12: Sunday, April 3rd

I took a blueberry bagel with cream cheese to work for breakfast. Dyanne gave me a croissant, but I forgot to save a picture of it since I took it on snapchat and sent it out to Armando and a couple other firends lol I had the croissant and bagel with the iced caramel macchiato coffee from Starbucks that I had leftover from yesterday.
After work I went to my parents' house. My mom made me a black beans, serrano chili pepper, and egg scramble with a slice of avocado and tortillas. It was perf.
Later, Armando and I went to the Block to return his shoes and we stopped at Johnny Rockets. I ordered onion rings, fries, and a chocolate milkshake.
At night we went to Sonic's and I got a four-piece order of mozzarella cheese sticks and a strawberry slushie.

I have realized that eating meatless is not that hard, but I have to focus more on homemade meals.

Day 11: Saturday, April 2nd

On Saturday we woke up late and had breakfast for lunch, late lunch at that. We ended up going to IHOP and may have gone a little overboard by ordering a lot so we were pretty full for the entire day.

We got an order of half mozzarella cheese sticks and half onion rings as an appetizer.
I ordered the strawberries and bananas french toast plate. Last time I had ordered this plate, they realllly packed on the strawberry drizzle so I remembered (or Armando reminded me) to ask them not to put so much. 
The french toast platter came with a side of eggs and hashbrowns. 
I substituted the sausage links/bacon for red skin potatoes. I noticed that with the potatoes and the hashbrowns, I was eating a lot of potatoes. I have to be more conscientious about the health aspects of the food I'm choosing.
While we were studying at UCI, Armando got me an iced caramel macchiato from Starbucks which I did not finish. After studying with Jenna for a while, we took her to Joe's Italian Ice to try a Joe Latti (Italian ice cream and soft-serve ice cream in a cup).

Day 4: March 27th

Day 4th: 
It's getting easier not eating meat - at least outside food :( Since Spring Break is almost over, we have to go back to reality - school, homemade food, etc.

Lunch: 
My brother-in-law brought us lunch. He brought us a quesadilla with rice, beans, and salsa.
I do want to say I'm a little concerned about eating outside food. I found three different types of meats in my rice.... so I don't know if I ate some by accident - I don't recall tasting it, but I don't know 100%.
Dinner:
We went to Taco Bell to get food and I got a crunch wrap. I substituted the ground beef for beans. I keep getting surprised because food is just as good without meat.
Since today is the last day of Spring Break, I got a grande iced caramel macchiato to stay up and prepare for the week.

I'm a little concerned about how the next eleven weeks will go because our living situation only allows us limited access to the kitchen, sadly. Will try to make food at home.

Day 3: Saturday March 26th

Day 3
On Saturday my mom made pozoleeeeee. I thought it would be hard to avoid eating meat at my mom's, but surprisingly, it wasn't. Pozole without meat was just as good. :) Her pozole is soooo incredibly delicious.
Evening: 
Later in the evening, we went to celebrate my nieces 2nd birthday. Birthday parties may be hard in the future as well as holidays :/ 
I first had two slices of pizza, but took off the pepperoni (turns out they had cheese, but it wasn't outside) from Little Caesars. I also had caesar salad, potato salad, and rice. I drank water and some Fanta soda. 
Later, later, I had two slices of cheese pizza.

Day 2: March 25th

As I'm typing this, I'm realizing that this spring break we have been eating out a lot. Danggg!! :(

Lunch: 
We went to Shakey's and ordered a pizza with mushrooms and jalapeƱos toppings and papas mojo. I had Brisk Raspberry Iced Tea to drink.  


We went to visit my mom today and she told us she is making pozole tomorrow. Yikes. THAT is going to be hard. :'( Oh that reminds me, I had about five spoons of rice at my mom's.

After I posted this, I had a night snack... uh, meal?
I had coffee and toast.

Day 1: March 24

So, my first official day without any meat was yesterday: Thursday, March 24th. I went the entire day without eating meat, woo hoo!

Lunch: 
We went to Taqueria Los Grandes where I ordered a chile relleno (stuffed chili pepper) dish. The dish came with a side of beans with cheese, rice, pico de gallo, salsa de aceite, and corn tortillas. I also ordered a side of guacamole which turned out to be too much so I shared with [A]. I drank an agua de horchata. This was super delicious.

Dinner: 
We had a very, very late dinner Thursday night. We went to Denny's sometime after 11pm. I ordered the french toast slam... which I failed to take a picture of the actual french toast because it wasn't fully cooked when they brought it out so they had to remake it :/ The french toast slam came with a side of eggs, two sausage links and two slices of bacon, but I exchanged both the bacon and sausage links for hash browns. [A] shared a slice of toast with me and we both shared mozzarella sticks. Oh and I had some coffee which was too bitter.

Day 0

Today was my first time trying a vegetarian lifestyle. Unfortunately, since [A] and I were with friends, we decided to go to Boiling Crab for dinner where I gave in and ate shrimp.

Breakfast time: 
For breakfast we had a small delicious croissant with a custard filling, bananas, and strawberries - no picture available that [D] brought for [A] and me.

Lunch time:
We went to Urbane Cafe and I had the Bella Portobello sandwich, water, and a piece of [D's] brownie. This sandwich had marinated portobello mushrooms, sliced tomato, mozzarella cheese, tomato aioli, mixed greens with balsamic dressing.

Pre-dinner dessert: 
In the evening, we went to Tierra Mia Coffee where I had a Chocolate Mexicano Frappe and part of [D's] pina colada muffin.

Dinner time:
We went to Boiling Crab where I had half a pound of shrimp, rice, and some lemon pepper fries and Cajun fries. Oops didn't take a picture of the shrimp.

We'll see how tomorrow goes!
